Mediterranean Cooking

Our three part cooking class will help you to become confident in your
cooking skills and understanding of cooking like a Mediterranean. We include the
basic staples and fundamentals of Mediterranean spices herbs and way of life.
Part I - Heart Healthy Cooking and You
The objective of the class is to explore important aspects of creative heart
healthy cooking and making food that is easy, delicious and fun to make. This
class will provide you with good, practical advice to implement key tenets of
such a diet.
Menu: Seasonal salad with low sodium, good tasting dressings that are
good for you • Mushroom barley soup with low saturated fat and low sodium
chicken stock • Roasted vegetables with olive oil and fresh herbs • Baked lemon
chicken with olives
Part II - The Mediterranean Diet In Focus
The emphasis of this class is on the Mediterranean diet. The class will cover
practical advice on how to adopt such a diet and put it into practice in
everyday life.
Menu: Fruit and vegetable salad with creative and simple dressings •
Chick pea and eggplant dips with pita • Baked salmon filet in citrus and pine
nuts • Eggplant, tomato & chick pea stew • Basmati Rice Pilaf
Part III - The Mediterranean Diet and the Holidays
The Mediterranean diet or Life style, with its great emphasis of the consumption
of fresh Fruits and vegetables, Whole grains and Legumes, Olive oil, Fresh Fish,
is heralded as the healthier alternative to the fast food, highly processed
foods, trans-fat rich foods and diets in our society. This Class will further
explore how this diet/lifestyle will improve your cooking skills, use of herbs,
spices and fresh ingredients for better cooking and better health. Menu will be
based on fall harvest with on eye on seasonal and holiday food.
Instructor: Shaw Rabadi chief-owner of BFS Restaurant and Catering in
Albany, for the last 20 years. Has a deep passion for great foods and education.
